We don't buy beans off a distributor's catalogue — the roaster we work with flies to Ethiopia and Guatemala every year to pick lots in person, not from a photo in a price list.
It's the same with tea: our oolongs come straight from a small farm in Fujian, not through a trader who blends three harvests into one tin to keep the price steady.
