We don't buy beans off a distributor's catalogue — the roaster we work with flies to Ethiopia and Guatemala every year to pick lots in person, not from a photo in a price list.

It's the same with tea: our oolongs come straight from a small farm in Fujian, not through a trader who blends three harvests into one tin to keep the price steady.

The difference in approach doesn't show up in the copy on the bag — it shows up in the cup. Beans that sat in a warehouse for three months never smell the same as beans roasted a week ago.
